Beef Udon

This is another family favourite of ours, especially when it is cold outside. It is very simple to prepare and we like to serve it with a simple vegetable stir-fry. The amount of ingredients used are a rough estimate so you to customise it to your taste buds. Most importantly, all the ingredients used are listed so no flavour is missed! Here, I have put together photos with amounts of each ingredients that I used. Seasonings like salt, sugar, soy sauce, etc are all added to taste.

 

Ingredients


- Dried anchovies

- Bonito flakes

- Kelp

- Beef pieces

- Spring onions

- Udon noodles (fresh or frozen. I used frozen)

- Boiled eggs

- Light soy sauce

- Mirin

- Sugar

- Salt

- Vegetable oil (I used canola oil)


Method


Stock.

Add dried anchovies, kelp and bonito flakes and water to a big pot, and boil for about half an hour. Strain the stock to obtain clear stock. Add soy sauce, mirin and salt to taste.


Fried beef.

Heat up about a tablespoon of vegetable oil and add spring onions. Add beef pieces and fry till cook. Season with soy sauce, sugar and salt to taste.


Udon and assembly.

Boil udon in a pot of water until cooked. Drain and set aside. To assemble, add udon to a bowl, add stock, and garnish with spring onions and boiled egg.
