Grilled Vegetables Salad


We are one month into Spring now. I cannot believe how fast time has flown under lockdown in Melbourne! We have been spending a lot of time at home, venturing out only for local walks and to the local supermarkets for our basic needs. As such, we have been opting for lighter meals. This salad is is our latest favorite in our household. It is so easy to prepare and is very satisfying as a standalone meal.


We have tried a medley of different vegetables, depending on what is in season and what we have available in our pantry:


For the grilled vegetables, we have tried:


1. Pumpkin, carrots, capsicums, zucchini


2. Pumpkin, eggplant, zucchini


3. Pumpkin, carrots, zucchini


4. Sweet potatoes, capsicum, carrots


As you can tell, we always have pumpkin, zucchini and carrots in our household! They have also been in season lately. I love adding shallots to the mix as it adds another layer of flavor to the seasoning once they're grilled. However, if you prefer them crunchy, just toss them in raw. They are sweet and are not as spicy and strong in flavor as onions! We loveee them!


To prepare them for the grill, the vegetables are simply drizzled with a light seasoning of oil and grilled until cooked. Then some fresh salad greens are tossed in to the mix and finished with a vinaigrette dressing to complete the dish.


It's so easy and is done with little effort for a satisfying lunch or dinner!


Ingredients


- Any vegetables (pumpkin, sweet potatoes, potatoes, carrots, capsicums, zucchini, eggplant, mushrooms, shallots are all great choices)

- Fresh greens (spinach, arugula, mixed salad greens, tomatoes, cucumber, shallots)


For the vinaigrette:


- 1/8 cup olive oil

- 1/4 cup balsamic vinegar

- 1/2 tsp mustard

- Salt to taste


Method


- Preheat oven to 180 ℃ on the grill setting.

- Lightly season vegetables to be grilled with olive oil. Grill in the oven until cooked.

- Mix vinaigrette with ratios listed above. Feel free to adjust according to taste. The amounts listed are a guide based on how much I use for my preference.

- After the grilled vegetables are done, add in the fresh greens and the vinaigrette. Toss to combine.

- Serve!
