Rich Chocolate Pudding

We love our chocolate. This chocolate pudding is a never-fail comfort dessert when we have that 'got to have chocolate' craving. It never fails to satisfy and is extremely easy to make as well. You can also vary the recipe to whatever ingredients you have at home. For example, using skim milk for a lower fat option, nut milk for a dairy free option, raw cocoa powder or even carob powder (which is naturally sweet), etc. We have tried it with oat milk and were pleased with the taste too. We do find that the level of sweetness the chocolate chips imparts to the pudding is sufficient for us, however, if you would like a sweeter pudding, feel free to add some sugar (1/4 cup as a starting point). You can also up the chocolate intensity by using dark chocolate chips. The butter imparts a richness to the chocolate pudding and does not taste as great without it (in my opinion), so that is one ingredient I do not recommend omitting! The chocolate pudding can also be 'dressed up' or turned into a more elaborate dessert with toppings like nuts (raw or roasted almonds, hazelnuts, cashews etc), dried fruits (raisins, coconuts, currants etc), chocolate shavings, cocoa nibs, etc. Our favourite is roasted silvered almonds. Ingredients


- 2 cups full cream milk

- 1/4 cup cocoa powder

- 1/8 tsp salt


- 1/2 cup milk

- 3 tbsp cornflour


- 1/2 cup milk chocolate chips

- 1 tsp vanilla essence

- 1 tbsp butter


Method

  • Combine the 2 cups of milk, cocoa powder and salt, and bring to a gentle boil over a medium flame.

  • In a separate bowl, dissolve the cornflour in 1/2 cup of milk. Add to the boiling mixture. Keep stirring until the mixture thickens to desired consistency.

  • Add in milk chocolate chips, vanilla essence and butter till the chocolate chips and butter melts, and the pudding is smooth. Enjoy!
